About this dish
The mainland province that Koh Lanta belongs to, Krabi, is one of Thailand's most important cashew-growing areas, its warm climate and hilly plantations producing nuts prized for their size and freshness. As a result, cashews (met mamuang himmaphan) are a defining local product and souvenir across the island. Harvested from the curious cashew apple β the fleshy fruit from which the single kidney-shaped nut hangs β the kernels are roasted on site and sold by the bag in countless forms: plain, salted, honey-glazed, coconut-coated, or tossed with dried chilli and lime for a sweet-hot snack. Far crisper and more buttery than the stale supermarket version, freshly roasted Krabi cashews are sold at markets, roadside stands, and pasalubong shops all over Koh Lanta. Lightweight, long-keeping, and universally liked, a bag or two is the simplest edible gift to carry home from the island.
