Massaman is the most famous expression of Koh Lanta's deep Thai-Muslim heritage, a curry whose very spices tell the story of the maritime spice trade. While most Thai curries lean on fresh herbs and fierce chilli, massaman is built on the warm, sweet spices brought by Persian, Indian, and Malay Muslim traders centuries ago — cinnamon, cardamom, cloves, star anise, cumin, and nutmeg — simmered gently in coconut milk with tender beef or chicken, whole shallots, potato, and a generous handful of roasted peanuts. The result is rich, mild, and faintly sweet, balanced with tamarind and palm sugar rather than heat. On Koh Lanta, where a large share of the island's families are Muslim, massaman is everyday cooking rather than a special-occasion dish, and the most authentic versions are served at the small halal restaurants around Saladan and the Old Town — best eaten the local way, by tearing off pieces of hot roti to scoop up the sauce.
