About this dish
Sea urchin (nhum or cầu gai) is harvested by free-divers who prise the spiny shells from rocky reefs around the island, making it one of Phu Quoc's more labour-intensive and sought-after delicacies. Once cleaned and halved, the urchin is set cut-side up over charcoal and dressed with mỡ hành — a hot scallion-and-oil spoonful — plus a scatter of crushed roasted peanuts, and sometimes a cracked quail egg that sets into the warming roe. Brief grilling transforms the orange roe from briny and raw into something custard-rich, creamy, and faintly sweet, eaten straight from the shell with a squeeze of lime and a pinch of the island's salt-pepper-lime mix. Long reputed among locals as a restorative and aphrodisiac, grilled urchin is a fixture of the Dinh Cậu Night Market and the seafood stalls along Trần Phú, where the smell of scallion oil hitting hot coals draws crowds each evening.
