Inihaw na pusit — grilled squid — is one of the simplest and most satisfying expressions of Palawan's seafood abundance, found at every grill from the Puerto Princesa baywalk to the beach shacks of El Nido and Coron. Whole fresh squid, frequently stuffed with chopped tomato and onion that steam inside the body as it cooks, is laid over charcoal and grilled quickly so the flesh stays tender rather than turning rubbery, brushed with a glaze of soy sauce and calamansi that caramelises at the edges. It is sliced into rings and served with rice and a dipping bowl of spiced vinegar (sukang sawsawan), and it shines brightest when the squid was swimming that same morning — which, in Palawan's fishing towns, it usually was. Affordable, smoky, and quintessentially Filipino, grilled squid is a fixture of the seafood platters that define dining across the island.
