Titiyas (also spelled tityas) is a CHamoru flatbread with roots in the island's indigenous traditions, predating Spanish colonization. Made from either corn masa or all-purpose flour, the dough is mixed with coconut milk and a pinch of sugar before being pressed flat and cooked on a dry griddle. The result is slightly chewy, lightly sweet, and smoky from the griddle. Corn titiyas is naturally gluten-free and has a more robust, earthy flavor; flour titiyas is softer and more neutral. Both are perfect for scooping up kelaguen or eating alongside a bowl of red rice.
