CHamoru BBQ is a communal ritual as much as a meal. The signature sweet-soy marinade — made with soy sauce, vinegar, garlic, sugar, lemon juice, and onion — is left to absorb overnight before the ribs hit the charcoal grill. The result is deeply caramelized, smoky, and tender. Chamorro Village Night Market, held every Wednesday evening in Hagåtña, is the best place on the island to experience CHamoru BBQ at its most authentic — paired with red rice and finadene dipping sauce.
