About this dish

Empanada arrived on Guam through Spanish colonialism and was adopted wholeheartedly into CHamoru food culture. The Guam version uses a distinctively red-orange dough colored with achote, pressed into a crescent shape and deep-fried until the shell is shatteringly crispy. The traditional filling is a savory mix of fish (often tuna or mackerel), grated coconut, onion, and seasoning. Modern versions may include vegetables, shrimp, or chicken. Empanada is a street food staple — grab one at Chamorro Village or look for signs at local fiesta fundraisers.
