About this dish

If one drink defines Boracay it's the mango shake, and the place that made it legendary is Jonah's Fruit Shake & Snack Bar, a humble stand on White Beach's Station 1 that has been blending them since the 1990s. The recipe is disarmingly simple — ripe, sweet carabao mango whipped with ice (and, depending on the version, a little milk or sugar) into a thick, frosty, pure-orange shake — but the quality of Philippine mango makes it extraordinary, tasting like cold liquid sunshine after a day in the sea. Over the years Jonah's expanded into a cult menu of combinations: mango-banana, melon-mango, avocado, and the famously over-the-top 'Banana 10000', loaded with banana, chocolate, peanuts, and more. Imitators now line the beach, but Jonah's remains the original pilgrimage, and a mango shake in hand is as much a part of the Boracay sunset as the sand itself.
