Calamansi Muffin
The pastry that made Real Coffee & Tea Café a Boracay institution — a moist, buttery muffin scented and glazed with calamansi, the tiny native citrus, for a bright sweet-tart lift. Baked fresh daily and bought by the boxful as a souvenir.
About this dish
The calamansi muffin is Boracay's most famous baked good and, for many visitors, an essential pasalubong (homecoming gift). It is inseparable from Real Coffee & Tea Café, an American-Filipino-run institution that opened on White Beach in 1996 and put itself on the map the moment it began serving these muffins. The star ingredient is calamansi — the tiny, intensely fragrant native Philippine citrus that sits somewhere between lime and mandarin — folded into a tender, buttery batter and finished with a calamansi glaze that delivers a bright, sweet-tart jolt against the rich crumb. Baked fresh every morning, they sell out regularly and are bought by the boxful to carry home or onto the plane. Real Coffee's two White Beach locations have become a pilgrimage stop for muffin-seekers, and the calamansi muffin now stands alongside dried mango as an edible emblem of the island.
