Chewy, intensely sweet-tart strips of sun-ripened Philippine carabao mango — among the sweetest varieties in the world — dried without artificial flavouring. The quintessential pasalubong, impossible to leave the island without.

About this dish

Dried mangoes are the Philippines' most successful edible export and the default pasalubong from anywhere in the country, Boracay included. They are made from the carabao mango (Mangifera indica 'Carabao'), a variety so prized for its honeyed sweetness and low fibre that it has been recognised among the sweetest mangoes in the world. Ripe fruit is peeled, sliced into strips, and slowly dried — the best brands use no artificial flavouring and only modest added sugar — concentrating the flavour into a chewy, glowing-orange strip that balances intense sweetness with a citrusy tang. Cebu is the historic centre of the industry, but the product is sold everywhere, and in Boracay every pasalubong shop at D'Mall and the Caticlan Jetty Port stacks them in brightly coloured pouches. Lightweight, long-keeping, and universally loved, a bag of dried mango is the simplest way to bring the island's sunshine home.
