About this dish
Khanom jeen — soft, slightly sour fermented rice vermicelli — is eaten the length of Thailand, but Phuket's breakfast version has its own character thanks to the island's seafood and Southern intensity. Bundles of the cool, silky noodles are doused in a hot curry ladled to order: most beloved is nam ya poo, a rich coconut curry thick with the meat of fresh crab, though a sharper southern fish curry (nam ya pla) is equally classic. What turns it into a Phuket ritual is the spread that comes with it — a free, help-yourself platter of raw and blanched vegetables, pickled greens, fresh herbs, long beans, bean sprouts, cucumber, boiled egg, and fiery dried-chilli flakes — which each diner piles on to balance the curry's richness. Cheap, nourishing, and endlessly adjustable, it is the working breakfast of Phuket Town, eaten from dawn at humble specialist shops.
