Kelaguen is one of the most beloved dishes in CHamoru cuisine. The word itself is believed to derive from the Spanish word for marinate. Traditionally made with chicken, beef, or shrimp, the protein is mixed with freshly squeezed lemon or lime juice — the acid effectively 'cooking' the meat without heat. Grated fresh coconut and finely chopped green onion and hot pepper are then folded in. Every family has its own recipe, but the result is always bright, citrusy, and slightly spicy. It's a fixture at every CHamoru celebration, from fiestas to family barbecues, and is always served alongside red rice and titiyas.
